Also here is the question, why do you need to have that field in the regmap config structure and can't simply use the parent's fwnode? In the regmap GPIO configuration you supply struct fwnode_handle *fwnode.
You can you fwnode API in the actual GPIO controller driver.
Inside gpio-regmap simply do this for now
gc->of_node = to_of_node(config->fwnode);
The last part is an amendment I have told about, but it can be done
later on by switching the entire GPIO chip to use fwnode instead of
of_node.

I feel your pain, although I think that the best way is avoid spreading OF-specifics over generic code. Using fwnode API is pretty much straightforward. It has been designed in a way to make it less invasive for existing code to be converted. There are plenty of changes in the upstream that show how it looks like.
